Burritos can be a great way to get protein, vegetables and carbohydrates you need to make it through your next workout. Plus, healthy burritos can help you stay energized throughout the day and are portable for those of you on the go. Johnny Bitter, owner and chef of Johnny Burrito, says that the less processed the food is the better. He offers the following recipes for the novice burrito maker.

Whole Wheat Chicken Burrito

  • 3 oz. chicken breast, chopped
  • ½ cup romaine lettuce, shredded
  • ¼ cup corn (yellow or white)
  • 2 tablespoons Verne salsa
  • ¼ cup brown rice
  • ¼ cup black beans, drained
  • 1 large whole wheat tortilla

Directions:

  1. Season chicken breast to taste and cook in skillet until internal temperature is 160⁰F, chop into small pieces and set aside.
  2. Cook rice until tender, set aside.
  3. Combine all ingredients into the center of the tortilla.
  4. Roll burrito style and enjoy!

Breakfast Burrito

  • 2 teaspoons canola oil
  • 1/2; cup red onion, diced
  • 1/2;  red bell pepper, seeded and diced
  • 1/4;  cup black beans, drained
  • 2 egg whites
  • Cooking spray
  • 1 whole wheat tortilla
  • 2 tablespoon salsa
  • 1/2; tomato, chopped
  • 1/2; small avocado, cubed
  • Hot sauce (optional)

Directions:

  1. Sautee onion and peppers until tender.
  2. Add black beans to warm for about 2 minutes.
  3. Whisk egg whites and add to onions, pepper and black beans.
  4. Scramble until cook through.
  5. Add to center of tortilla.
  6. Top with tomato and avocado.
  7. Roll, burrito style, and enjoy!
Turkey Sun-Dried Tomato Burrito

  • 1/4; cup corn kernels
  • 1/4; cup chopped tomato
  • 1/4; cup chopped sun-dried tomatoes
  • 2 tablespoons canola oil
  • 1 tablespoon red-wine vinegar or cider vinegar
  • 4 oz. low-sodium deli turkey
  • 1 whole wheat tortillas
  • 1/2; cup chopped romaine lettuce

Directions:

  1. In a bowl mix corn, tomatoes, vinegar, and oil.
  2. Place turkey in tortilla.
  3. Top with corn and lettuce.
  4. Roll, burrito style, and enjoy!
